Recipe: Tender Scallop Scampi


In a large saute` pan on high heat, add 4 oz olive oil, add lightly floursed scallops, cooking 2 minutes on each site or to a nice golden brown. Add 2 tbsp chopped garlic, fresh parsley, lower heat to medium. Next deglaze with white wine and lemon juice, reduce liquid by half, add lemon slices, red pepper flakes, white pepper and butter. Let simmer for two minutes, stirring lightly. Plate and serve over angel hair pasta or your favorite pasta.
